Ham-cheese Chicken Breast

escalopeThis one of my mom’s recipees, used to eat it with French fries but fresh pastas are also a good option (especially tagliatelle and gnocchi). You can also add mushrooms to the sauce. You can also use turkey or veal insted of chicken.

For 2 person:
2 chicken breasts
2 slices of Prosciutto
2 slices of Cheddar (or any kind of cheese for sandwich that melts easily)
100 g of creme fraiche
2 big spoons of tomato sauce
250g of pasta

Cook your pastas apart

In a pan put some butter or oil, fry the chicken (or turkey or veal), before it’s 100% cooked, put a slice of prosciutto on each breast and the slice of cheese on top of it. When the cheese is melted, take the chicken apart (on a plate), lower the temperature under the pan, add the creme fraiche and the tomato (and optional the mushrooms) and stir. Put a part of the sauce on the pasta, the other one in a bowl. In the plate you’ll serve the chicken and the pasta and then everyone can add sauce of the meat to their liking.
